Hope this is the right place to post this. So when I try to open a file with notepad, the letters don't show up in english, instead they just look like a bunch of jumbled up characters and symbols. Can anyone tell me how to change that?

The problem there is that you have tried to open a gif file, which is normally a graphic type file for photos or presentations.
If you are trying to open files in Dh2005 there are only a few that will be formatted to open wit notepad.
Normally they would be the Profile , The terrain file and any other files with a tex extension in custom object files.
To open the terrain file, for example, you need to right click on it and select.. open with notepad.
This will set the file association and allow it to be opened, read and edited..
Other files with a tex extension will normally open with a double click, but not all files will contain readable english, particularly if they contain instructios to be read by the computer , rather than operator.
This is a very simplistic explanation. To understand fully you need to go on the web and start searching items related to file extensions and types.
I'm sorry, that's not what I meant. What I actually meant was, when I try to open my custom map's spk file with notepad instead of normal text I get these strange characters. I remember that there is a way to change it back to normal text, but I don't remember how. Here is a picture of the problem, please let me know if the picture won't show up.

Also I have not come across this problem my self so I cant specificaly relate to the problem you are trying to describe..
The only thing I can suggest is that you are trying to open the wrong file.
The file you want is the terain file , in the custom level folder.
In the specific folder of the map you are working with.
It is not a spk file. It may be a triangle in a circle and look like a spk, but it will have the file extension .ter.
After you set it to open with notepad it may change to look like a notepad file.
A spk is the finished map pack ( triangle and red circle with a file extension .spk ) that cannot be opened without a special program.)
Prog files ( Prog files 86 for win7 )
When you find that, right click and set it to open with notepad.
